Boy, what a beauty. If she were mine I'd leave the paint because it is good and change the mufflers to original. You have Norton Peashooters off a Commando on there now (could be BUB's). The original Yamaha Ball Bat mufflers sound better than just about anything but Peashooters so sound isn't a reason to change, only originality.
To make the bike handle and more enjoyable: Tapered steering head bearings. Bronze swing arm bearings. Make sure brake arms are 90° to the pull rod or cable. Modern bias tires. I put Super Venoms on my old Triumph and Barracudas on my XS. Quite the change with both tires. The newer tires have a stiff sidewall and are a b!+cH to change but handle so sweet. Change out the fork oil. Check the chain and sprockets for wear. Set timing with a light at full advance. Use high test gas on the highway so you don't hole a piston.
